
If you’re tired of eating Green Bean Casserole made with congealed Campbell soup at office potlucks, then this recipe is for you! Seriously though, a holiday meal should be anything but congealed. This is why I thought of creating this recipe. Although there are so many other versions of green bean casserole, this one here always wins. Hands down the best tasting green bean casserole dish, everyone asks the recipe for!

HISTORY OF GREEN BEAN CASSEROLE
“Green bean bake” or green bean casserole (as we now call it) was originally created by a Campbell Soup Company employee, Dorcas Reilly. It was a great technique to market one of the Campbell’s canned product, namely “Canned Cream of Mushroom Soup”. And the plan worked out really well indeed!

To this day, it is one of the most viewed Thanksgiving side dish recipes and the company sees 50% of the sale for Cream of Mushroom soup during November through January.
Originally the recipe called for only six ingredients. However, this recipe has been adapted into many a new versions, just like the one I am sharing with you in this article.

Green Beans Casserole
Ingredients
For the Onions
- 2 Tbsps Unsalted butter
- 2-3 Yellow onions, sliced
- ½ Tsp. Ground ginger powder
- ¼ Tsp. Black pepper powder, freshly ground
- ¼ Tsp Salt
- ½ Tbsp. Sherry vinegar
For the White Sauce
- 2 Tbsps Unsalted butter
- 2 ½ Tbsps All purpose flour
- 2 ½ Cups Milk
- ¼ Tsp Garlic powder
- ¼ Tsp Red chili pepper flakes
- ¼ Tsp Dried thyme
- ½ Tsp Salt
- ¼ Tsp Black pepper powder, freshly ground
For the Topping
- ⅔ Cup Panko, or other style bread crumbs
- 2 Tbsps Butter, melted
For the Beans & Assembly
- 2 Lbs. Green beans, trimmed and blanched
- ½ Tsp Black pepper powder, freshly ground
- 4 Oz Gruyere cheese, grated and divided
- ⅓ Cup Parmesan cheese, grated
- Salt and pepper, to taste
Instructions
For the Beans
- Keep a saucepot with water to boil on medium heat.
- Add salt to the water.
- Throw in the chopped beans to blanch for a couple of minutes.
- Immediately drain and thrown in icy water, to stop the beans from cooking further.
- Drain and keep aside.
For the Onions
- Add butter to the same saucepan on medium heat, throw in the sliced onions.
- Add salt, pepper & ginger powder to the onions.
- Add sherry vinegar and keep stirring till onions are light brown and caramelized.
- Add the blanched beans to the caramelized onions.
- Stir for 5 minutes on medium heat and remove from heat.
For the White Sauce
- In the same pan, add butter and flour on low heat.
- The mixture will be lumpy, keep stirring for 2-3 minutes.
- Turn the heat to medium and add 1/3rd of the milk.
- Add garlic powder.
- Keep stirring till the mixture thickens.
- Repeat the steps, till all the milk is added and sauce starts thickening again.
- Add chili flakes and fresh thyme.
- To check, the sauce should leave a thick coat on the back of the spoon when done.
For the Topping
- Add melted butter to the panko. Mix thoroughly and keep aside.
To Assemble
- In a casserole, add beans and onions as the first layer.
- Add the white sauce over the beans layer.
- Top with buttered panko. Make sure to cover all the beans.
- Spread a layer of gruyere cheese over the white sauce.
- Finally add a layer of parmesan cheese.
- Bake at 375°F for 25-35 minutes.
- Once the cheese is all browned, remove from the oven.
- Cut into squares and serve warm.
RECIPEFORTE FOODNOTES
- Turn the recipe into gluten free by using Kikkoman’s gluten free panko.
- If are out of sherry vinegar, you can also use white wine vinegar or rice vinegar.
- Replace chili flakes with cayenne pepper or red chili pepper.
- Short on time?? replace caramelized onions with canned fried onions.
- Making the casserole for a large gathering?? stack up multiple layers of green beans & the white sauce. More the cheese and sauce, the better it turns out to be.
- Planning to use canned fried onions – make sure to not sprinkle cheese on top of the fried onions. Otherwise the fried onions will turn out to be chewy. Instead mix the cheese with green beans.
